  1. Cook rice according to package directions.
  2. Whisk orange juice with dressing, chicken broth, orange zest and cornstarch until combined; set aside.
  3. Heat oil in a large, non-stick skillet set over medium-high heat. Cook chicken with salt and pepper, stirring frequently for 5 to 7 minutes or until golden brown all over.
  4. Stir in sauce mixture; bring to a boil. Cook for 1 to 2 minutes or until thickened. Stir in snow peas. Cook for 1 minute or until tender crisp.
  5. Serve chicken with rice.
