1 cup (250 mL)
UNCLE BEN'S® Specialty Rice – 10 Minute Basmati
1 tbsp (15 mL)
Canola oil
1 lb (500 g)
Ground pork
Each salt and pepper
Onion, chopped
1/2 cup (125 mL)
Red pepper, chopped
1/2 cup (125 mL)
Chopped carrots
1 tbsp
Fresh gingerroot, minced
Clove garlic, minced
1/3 cup (75 mL)
Hoisin sauce
Boston lettuce leaves, washed and dried
1/4 cup (60 mL)
Chopped peanuts and sriracha or other Asian hot sauce (optional)

  1. Prepare rice according to package directions.
  2. In large skillet or wok, heat oil over high heat; cook pork, breaking up with a spoon, for 4 or 5 minutes or until no longer pink and starting to brown. Season with salt and pepper.
  3. Reduce heat to medium; cook onion, red pepper, carrots, ginger and garlic for 6 or 7 minutes or until softened. Add hoisin sauce, stirring to coat pork mixture; cook for 1 minute or until mixture is glossy.
  4. To serve, spoon some rice onto lettuce leaves; top with a spoonful of pork mixture. Garnish with chopped peanuts and sriracha (if using).
