Ingredients

1 cup (250 mL)
UNCLE BEN'S® WHOLEGRAIN BROWN RICE (10 MINUTE)
3 cups (750 mL)
shredded, cooked chicken
4 cups (1 L)
prepared coleslaw mix with carrot, green and red cabbage
1/2
red pepper, thinly sliced
1/4 cup (60 mL)
finely sliced green onion
1/2 cup (125 mL)
Prepared Asian sesame dressing
1/4 cup (60 mL)
chopped roasted peanuts
1/4 cup (60 mL)
crispy chow mein noodles
2 tbsp (30 mL)
chopped fresh cilantro
lime wedges, optional

Directions

  1. Cook rice according to package directions without butter or salt. Cool to room temperature.
  2. Stir rice with chicken, coleslaw mix, red pepper and green onion until combined. Toss with dressing.
  3. Garnish with peanuts and chow mein noodles and cilantro. Serve with lime wedges if desired.
